I will cook it using this method, but I only have to leave it in the oven for 3 hours, correct? I have a battery powered digital meat thermometer that has a wire cord on it. You put the probe in the meat, and the part that registers the temperature sits on the counter, outside the oven. Is it ok to use one of these during cooking, as long as I do not open the door? (turning off the heat after 1 hour) I was wondering if a turkey cooked in the Nesco, using heat the whole time might turn out anything like the turkey's cooked using her method, if the Nesco was sealed the whole time, and had the liquid.
