We hope you had a relaxing July 4th holiday and that you had time to celebrate summer with fun, fireworks, and best of all food.  Fresh fruit and summer is the perfect way to soak up the last few weeks of summer and a great way to end a long day at the beach.  KitchenAid is excited to bring you a fresh Layered Fruit Parfait recipe that uses the best flavors of summer from blackberries and blueberries to nectarines and kiwi.  No need to labor in the kitchen to make the Layered Fruit Parfait, let the KitchenAid 9-Cup Food Processor do the work for you.   With the ExactSlice System, slice from thick to thin with one slide of the lever.  Slice thick strawberries or thin bananas without the need to change the blade. 

Recipe:

6 fresh strawberries, hulled

1 firm ripe banana, peeled

2 nectarines, pitted and quartered

2 kiwis, peeled

1 cup whipping cream

4 teaspoons powdered sugar

2 teaspoons vanilla

1⁄2 cup fresh blackberries

1⁄2 cup fresh blueberries

2 teaspoons grated lemon peel

1. Assemble KitchenAid® Food Processor with large work bowl and adjustable slicing disc; slide to fourth notch for thick slices. Slice strawberries and banana through small feed tube on low speed.

Slice nectarines and kiwis through medium feed tube. Transfer fruit to large bowl.

1. Replace slicing disc with multipurpose blade. Combine cream, powdered sugar and vanilla in bowl; process on low speed 30 to 60 seconds or until desired consistency of whipped cream is reached.


2. Layer 5 to 6 slices of each fruit in parfait glasses or bowls; top with 1 tablespoon blueberries and 1 tablespoon blackberries. Spoon dollop of whipped cream onto each serving; garnish with lemon peel.

Makes 5 to 6 servings

Tip: Refrigerate or freeze any leftover fruit for smoothies.
