Yum…Bring on the Thanksgiving Leftovers!

by on ‎11-26-2014 03:03 PM

Now that the excitement of Thanksgiving Day is over, I hope you are enjoying plenty of great time with those you love this holiday weekend! I know I am. J

I am looking forward to some serious snuggle time with Fozzie, a few fun hangouts with friends and maybe even a little retail therapy. (Though I’m finding so many great deals on QVC today, I may even be able to skip the mall this year! Don’t miss QVC’s Black Friday Easy Pay offers on select temp-tations.

And even though yesterday was like the Olympics of cooking at my house, I can’t wait to get back in the kitchen for one, glorious reason: Mmmmm…Leftovers. Smiley Wink

Sometimes I think I actually enjoy leftovers even more than the Thanksgiving meal, itself. After all, when it comes to leftovers, you’ve already put in all the love and effort. Now’s the time to just settle in and enjoy.

Do you have a favorite way to make the most of your leftovers? Turkey Casserole? Turkey Tacos? Turkey Tetrazzini? Let me know in the comments section, below. I’m always looking for new ideas. Here’s what I plan on enjoying today. It’s one of my all-time favorite ways to enjoy post-Thanksgiving extras.

Stuffed Turkey Panini

2 slices sourdough bread

2 Tablespoons Dijon mustard

2 slices provolone cheese

⅓ cup leftover turkey, shredded

¼ cup leftover cranberry sauce

⅓ cup leftover stuffing

2 Tablespoons leftover gravy

2 Tablespoons butter, soft

  1. Place a grill pan over medium heat.

  2. Spread mustard on one side of each bread slice.  Set one aside.

  3. Lay one piece of cheese on top of the mustard on one bread slice.  Top with the turkey, followed by the cranberry sauce, stuffing, gravy and the other piece of cheese.

  4. Top with the remaining slice of bread.  Spread one tablespoon of butter on the top of the sandwich and carefully flip it over onto the hot grill pan.  Spread the remaining butter on top of the sandwich.

  5. Cook for about 5 minutes on each side, or until toasted and golden brown.  If you have a heavy weight for your grill pan place it on top of the sandwich to ensure even cooking and grill marks.

My other favorite thing about Thanksgiving leftovers: It’s so easy to serve, store and serve them up again, when you use temp-tations. No searching around for the right-sized container or lid, not struggling with plastic wrap or foil. Last night I was able to clear our Thanksgiving table in minutes. I simply brought everything straight from the table to the fridge, added a storage cover and then went back to enjoying time with my family. Best of all, today all my panini ingredients are there, just waiting for me to remix them into something even more delicious.

I can’t wait to read your delicious ideas for Thanksgiving leftovers. Hope I have enough left over to try them all! And I hope you and your family enjoy every minute of this holiday weekend and the holidays ahead.

XOXO
