Meal Make-over Monday - Corn Avocado Salad

Hi everyone!

 

I hope you all had a wonderful Easter!  For today's Meal Make-over Monday recipe, I chose a delicious, light salad. I can even see this with cooked shrimp or chicken for a complete meal.  If you give it a try, please let me know what you think!

Corn Avocado Salad

 

 

 

Ingredients:

 

2 Ears of fresh corn, cooked and corn cut off

 

2 Avocados, chopped

 

1/2 medium onion, chopped, about 1/3 cup

 

1/4 cup chopped red cabbage

 

1/4 cup chopped onion

 

1/4 cup chopped sweet pepper

 

 

 

Directions:

 

 

 

Mix all chopped ingredients, except avocado, together.

 

Mix in corn.  Stir well.

 

 

 

 

Gently mix in avocado.

 

 

 

 

 

 

Season with 2 Tbls. olive oil and 1Tbl Vinegar

 

Salt and Pepper to taste.
