Welcome to another Meal Make-over Monday! Instead of having spaghetti and meatballs tonight, why not try my Spaghetti Squash Recipe?

Spaghetti Squash:
INGREDIENTS:
1 cup onions
1 cup bell peppers
1 cup mushrooms
2 cloves garlic
Spaghetti Squash
1 Tablespoon Olive Oil
Salt and Pepper to taste
Wash the squash and pat dry with paper towels. Pierce all the way to center core or it will explode in microwave.
Microwave squash for 10 - 15 minutes depending on size of squash. Do not overcook or squash noodles become mushy.
Chop all other veggies keeping them separate.
When squash is done, use a fork to gently pull “noodles” out of squash shell. Set aside.
Saute other veggies in small amount of olive oil. Begin with onions and bell peppers and then add mushrooms. Add garlic last.
Saute only long enough to warm veggies through. Do not overcook.
Add squash "noodles" to sauteed veggies.
Season mixture with salt & pepper.
Combine well and it is ready to serve! But you can also add cooked chicken or shrimp for a complete meal.
