Onion Soup Potatoes

Several years ago I made this recipe for a casual family get together.  My niece, Kennady, at the time was a picky eater and would only eat chicken nuggets & french fries.  I begged her to try my potatoes, which she did because she loves her Aunt Jayne  {#emotions_dlg.biggrin} and to my delight she LOVED them.  It is the easiest side dish. Perfect for when you are cooking for a crowd.  I took it to a potluck dinner with some friends on Sunday.  Once again it got rave reviews.  Enjoy!!



 


Onion Soup Potatoes


2 lbs red bliss potatoes, cut into 1/2 inch cubes


1/3 cup olive oil


1 package onion soup mix


Put potatoes in a casserole dish.  Drizzle with the olive oil and onion soup mix.  Stir to coat all of the potatoes.


Bake @ 400 for 30 minutes to desired firmness.
