Cheater Pressure Cooker Pulled Pork

This is a cheater recipe because I use jarred BBQ sauce instead of making it from scratch.  The brown sugar & mustard add a little kick to the sauce.  The recipe is based on the one from the Cooks Essentials Pressure Cooker book. 


Cheater Pressure Cooker Pulled Pork 



Ingredients:


4 – 5 lb. Pork Tenderloin


4 strips bacon


1 onion – chopped fine


3 cloves garlic –minced


2 Tb. Spicy brown mustard


2 tsp. brown sugar


1 tsp. Paprika


18 oz. BBQ sauce


½ cup chicken stock


Directions:


I cooked the bacon in the pressure cooker so that I could use the bacon drippings to brown the pork.  You can use another oil.  Brown the pork on all sides.   Remove and set aside.  Add onions & garlic.  Cook for a few minutes until the onions soften.  Add all other ingredients and cook for a few minutes until hot & bubbly.  Return pork to the pressure cooker.  Lock the lid in place and cook for 50 minutes.


This is a sweet & tangy recipe.  The pork is moist & tender.  Enjoy!
