Mary Beth's Menu - Chili

My one-pot chili will warm you up on a cool, fall day.


Chili Con Carne



  • 1 pound lean ground beef

  • 1 medium onion, chopped

  • 1 small pepper, (I generally use green, but this time I used orange)

  • 2 large garlic cloves, minced

  • 1 14-16 oz. can diced tomatoes

  • 2 Tablespoons chili powder (more or less to suit your taste)

  • 1/2 teaspoon salt

  • 1 can kidney beans


In a 3 qt. or larger saucepan, cook ground beef, onions, green pepper and garlic until meat is no longer red. Drain fat. Add tomatoes and their liquid, chili powder and salt. Heat to a boil. Reduce heat to low, cover and simmer 1 hour, stirring occasionally. Stir in kidney beans with their liquid and heat thoroughly. 
Serve with your favorite accompaniments: (minced onion, fresh chiles, chopped coriander, shredded cheese, cornbread, etc.
