Mary Beth's Menu - Chicken A L'Orange

Chicken A L'Orange



  • 1/2 cup flour

  • 1/2 teaspoon salt

  • generous dash of pepper

  • 3 pounds chicken

  • 1 - 2 Tablespoons cooking oil of your choice

  • 1 cup orange juice

  • 2 tablespoons packed brown sugar

  • 2 teaspoons soy sauce

  • 1/2 teaspoon ground ginger


If this meal is intended for 2 to 3 people, you may cut the ingredients in half.

Preheat oven to 350 degrees. Stir together flour, salt and pepper and thoroughly coat chicken in mixture. Heat oil in saucepan over medium heat and cook chicken until slightly brown. Discard drippings. Combine orange juice, brown sugar, soy sauce and ginger mixing well. 
Place cooked chicken in an oven-safe baking dish and pour liquid mixture over top. Cover tightly with a lid or aluminum foil and bake for 35-40 minutes. Top with orange slices, if desired and serve with your choice of sides. 

To make ribbon oranges: cut an orange in thin slices, then cut halfway through the orange slice. Hold each end of the orange between your first finger and thumb of each hand and twist gently in opposite directions. Voila!
