Mary Beth's Menu - Mother's Day Edition

Happy Mother's Day!! And in honor of Mother's Day I thought I would take the opportunity to share one of my mom's favorite recipes with you. 


Mom's Swedish Rice Pudding


Ingredients:


1-1/4 cups of medium grain rice (not minute rice) rinsed with cold water


½ gallon of whole milk


6 egg yolks (leave a little of the whites in there)


1 cup sugar


½ tsp. salt


1 TBSP vanilla


2 tsp. lemon flavoring


Pour the milk into a large 5-6 qt. pot and heat on medium. When the milk is very hot but not boiling, add the rice.  Then turn the heat to medium low.  Stir often for about 30 minutes until the rice is soft to the taste, not crunchy. Don’t let it boil or stick to the bottom. 


Meanwhile, beat the 6 egg yolks. When the rice is soft, add the sugar and salt and stir well.  Then add the beaten egg yolks with a wire whip with a slow pour. Then stir in the vanilla and lemon flavorings. Remove it from the heat and let cool. Stir it up about every 10 minutes to fluff. Serve warm or cold with a little cinnamon powder on top.


Variations:


If you want the pudding to be thick and creamy, then don’t add this. If you want it to be lighter and fluffier, then add this: Take the egg whites you set aside, add ½ tsp of Cream of Tartar and ¼ tsp of salt. Whip into a meringue with a mixer, and when the pudding has cooled for a while, fold in the meringue until it’s all incorporated.


You can also add raisins or almonds or other things like that if you would like.  Sometimes my Mom would make it and serve it with a little cherry pie filling or strawberry sauce on top.
