Mary Beth's Menu - A Casserole using Leftover Easter Ham

Happy Easter, everybody!


This is a recipe for Green Bean and Ham Casserole.  It works with using canned ham, but I like to make it using leftovers from my Easter Ham. 


I didn't have any green beans on hand, so I substituted a 16oz. bag of frozen mini broccoli florettes. I also forgot to crush the corn flakes, but it didn't matter; it was still very tasty!


Ingredients:  


16 oz. frozen green beans or broccoli


2 cups cooked rice


1/2 cup grated cheddar cheese


6 oz. evaporated milk


1/4 cup water


2 cups chopped ham


1 can cream of mushroom soup


1/2 cup crushed corn flakes


 


Place all of the ingredients (except the cornflakes) in a buttered casserole dish. Mix thoroughly. Top with cornflakes and dot with 3 tablespoons of butter. Bake uncovered for 40 minutes at 375 degrees.
