Mary Beth's Menu - Easter Candy

I try to make this candy recipe every Easter and sometimes I like to add a few drops of food coloring to infuse a bit of pastels to the table. I hope you enjoy it!

  • 3 cups sugar

  • 1/2 cup white corn syrup

  • 1/8 teaspoon salt

  • 2/3 cup water

  • 2 egg whites

  • 1 teaspoon vanilla

  • 1 cup chopped nuts


Boil sugar, syrup and water to hard boil stage (260 degrees).

In the meantime, beat egg whites and salt in a Kitchen Aid mixer until stiff peaks form. Then slowly pour the hot syrup mixture in with the egg whites on moderate speed. Continue to mix until gloss disappears and the candy is ready to drop.

Add vanilla and nuts and drop by teaspoonfuls onto waxed paper.
