Recently, our good buddy Chris Pryme brought in a lock and lock container FULL of delicious no-bake cookies. AND they were gluten free! She is such a love for doing that and I am so very grateful to call her my friend.
I promised I would share the recipe, so here it is! Also, as you can see: they are pretty popular with the non-gluten free folks as well!
Ingredients:
1 cup toasted coconut
1 cup toasted gluten free oats
1 cup toasted large chopped pecans
1 cup raisins
1 cup crushed potato chips
2 1/12 cups chocolate chips
3 tbsp Crisco
Directions:
Melt the chocolate chips and the Crisco together until no lumps remain. Add all the remaining ingredients to the melted choc chips. Stir until all ingredients are coated. Drop by tablespoon on cookie sheet lined with wax paper. Let set (cool) until firm.
*You do not have to toast 1st 3 ingredients I like taste better
**If you want you can melt the choc chips with 3 tablespoons peanut butter and 1 tablespoon Crisco for a different flavor.
