Mary Beth's Menu - Pumpkin Bread

February is "Baking for Fun" month and my family loves homemade pumpkin bread. Don't think of pumpkin bread only during the fall months .... it is great anytime! Plus, it's easy to make and freeze in individual slices or loaves Enjoy!


Pumpkin Bread


Ingredients:



  • 1-1/2 cups sugar

  • 2 eggs

  • 1-3/4 cup flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon cloves

  • 1/2 teaspoon nutmeg

  • 1/3 cup water

  • 1/2 cup chopped nuts (I generally use walnuts)

  • 1/2 cup vegetable oil

  • 8 oz. canned pumpkin

  • 1/4 teaspoon baking powder

  • 1 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon allspice

  • 1/2 cup raisins (optional)


Mix together the sugar and oil, then add the eggs and canned pumpkin. Blend spices with flour and then add flour mixture to the pumpkin mixture. Then stir in nuts and raisins (I used golden raisins this time). Pour into two small greased loaf pans and bake at 350 degrees for one hour.
