Gluten Free Quiche Casserole

This recipe has a POUND of spinach in it – YES! So glad to have a delicious recipe that is packed with good greens. (Popeye would be proud!) Also, I am trying lots of different gluten-free mixes lately and today’s recipe—Gluten Free Quiche Casserole—calls for Bloomfield Farms Gluten Free Pancake & Waffle Mix.


 



Mixing this blend into the casserole with the butter, eggs, and ricotta gave it a slight crust-like texture on the bottom. Now, it is NOT a thick pastry shell at the bottom, but it does give an amazing, buttery, textural finish to the casserole. I did not expect it, but I LOVE IT! Let’s get into it!



Ingredients


1 (16-oz) bag of washed spinach


½ large yellow onion, diced


¼ cup Bloomfield Farms Mix


6 eggs


1 (15-oz) container skim ricotta


1 (8-oz) package 1/3 less fat cream cheese, room temperature


½ cup butter


½ pound of bacon


1 (8-oz) bag of shredded cheese of your choice! (I used Colby Jack)


2 Tbsp dried parsley flakes


Salt & pepper, to taste


Directions


Put the whole bag of spinach in a large sauté pan over medium heat. Put the lid on the pan and let it reduce all the way down until it looks like THIS:



Mix together the onion, eggs, and Bloomfield Mix. (You do not have to cook the onions prior to mixing everything together.)



In a separate bowl, mix in cream cheese and the wilted spinach. Don’t fret: your cream cheese can stay a little lumpy!



While your two bowls are resting on the counter, now it’s time to cook your bacon. And, make sure to eat a piece or two after it’s done. You deserve it. While your bacon cools and drains on paper towels, pour your egg mixture into the bowl with your spinach mixture and add the melted butter.


In a 9”x13” casserole dish, layer your egg/spinach mix, parsley flakes, crumbled bacon, and cheese.



Bake it at 350 degrees for 35 minutes, OR just until it looks brown and bubbly on top. I have a gas stove, so the cook times may be different depending on your oven!
