How Do You Like Your Omelet!?

I have no delusions of grandeur when it comes to winning the prize of the next Top Chef (I’m actually content that I didn’t burn the house down the last time I grilled steaks on the deck).  And while my wife Amy has become a master at whipping up delectable dishes for our family, every once in a while… I’m unleashed into the kitchen. With pans clanging and knives flailing, look out… it’s time for Dad… to make omelets!


The importance of a great breakfast cannot be overstated. With a combination of healthy carbs and protein, it’s a great way to get your engine revved up, and give you energy for an active day. And oh, by the way, a good omelet also tastes great!


Here are a few tricks I use to give my omelets flavor, while also keeping them a little bit on the healthy side:



  1. Use turkey bacon instead of traditional bacon

  2. Add some red pepper to give it a little tang without being overly spicy
     

  3. This might come as a surprise, but I also add in a dash of orange juice before I pour it into the hot pan. Yes, orange juice! 



  4. Instead of doing an ‘egg white only’ omelet, I usually add a yolk (or two).
     

  5. Add in some low fat cheese and a little spinach for some extra flavor


Finally-- To flip, or not to flip: that is the question. Do you like your omelet soft inside? Though I like it that way, I can’t resist taking the risk of ‘flipping’ the eggs before adding my ingredients. It’s fun (unless, of course, you miss the pan. Oops).

Rick’s ‘It’s gonna be great Day’ Omelet


Three eggs- use only two yolks


One oz. Orange juice


Two slices turkey bacon


One oz. spinach


Diced red pepper


Salt and pepper
