Connie's Italian Sausage and Lentil Soup

Hi ladies!


Just wanted to share this recipe with you as I heat up my leftovers from last night’s dinner. I know this is a bit different from my normal posts, but I made this delicious soup and I thought you’d all really enjoy it! Let me know if you tried it and what you think. Yum!


Ingredients:


1 lb. Italian sausage (I use half hot, half mild)


6 cups chicken broth


2 cans (14-1/2 oz. each) un-drained diced tomatoes (sometimes I use 1 can of Rotel to substitute for 1 can of tomatoes)


2 cups dry lentils, rinsed


1 large onion, chopped


2 large carrots, chopped


1 small zucchini, chopped


1 stalk celery, chopped


1 cup fresh baby spinach, chopped


2 cloves garlic, minced


1 tsp. salt


Black pepper, red pepper flakes, basil, oregano, parsley, and thyme to taste


Directions:


Brown sausage; drain off fat.


Combine all ingredients in a large pot and bring to a boil. Reduce heat, cover, and simmer for about 1 hour, or until lentils are tender. Add water, if necessary, for desired consistency.


Sprinkle with Parmesan cheese and serve.
