Salute to Summer!... and My Favorite Deviled Egg Recipe!!!

Summer is finally here and this means Memorial Day and the 4th of July, my two favorite summer weekends, are right around the corner. Cook outs, picnics, fireworks!!

I couldn’t write my first blog of the summer without sharing my favorite recipe for picnics and cookouts. I try to make these deviled eggs at least a couple of times during the summer. 

 

David’s Blue Cheese and Bacon Deviled Eggs

 

 

 

Makes 24 stuffed deviled eggs

 

Ingredients



    • 12 hardboiled eggs, cooled and peeled

 

    • 8 slices bacon or pancetta, cooked crispy and crumbled

 

    • 6 ounces strong blue cheese, crumbled

 

    • ¾ cup mayonnaise

 

    • ½ teaspoon of creamy Dijon mustard

 

    • Paprika, fresh parsley and/or chive blossoms for garnish (see below)




    1. Cut each egg in half lengthwise. Remove yolks by pressing gently on the bottom of the egg white.

 

    1. Using the back of a fork, mash the egg yolks and stir in the cheese, mayo and mustard. I like to leave this mixture a bit on the chunky side, not too smooth. Add salt and pepper to taste.

 

    1. Stir the bacon into the egg yolk mixture; make sure to save a few pieces for garnish.

 

    1. Using a fork, spoon the filling into the egg white halves and arrange on a pretty platter.

 

    1. Garnish with a piece of bacon and a few parsley leaves and/or chive blossoms. Dust with a bit of Paprika for a festive touch.



I have flowering chive plants in my garden in Chester County and if the time of year is right, I like to sprinkle the platter with chive blossoms! Enjoy!

 

 

Whether passed as hors d’oeuvre, or on a bed of spinach greens as a summer salad, these deviled eggs are the most popular thing that comes out of my kitchen! If you try them, you will know why!

A great way to celebrate these traditional American holidays (and any day that you are feeling patriotic!!) is to add a little RED, WHITE and BLUE to your outfit. And it’s easy!!
