Chicken Mushroom & Wild Rice Soup

One of my favorite parts of the winter season is the good old comfort foods and soups. Here is one I just made. It is hearty and flavorful. Enjoy!


Chicken Mushroom & Wild Rice Soup


 


Ingredients:


2 cups chopped cooked chicken


2 cups sliced mushrooms


2 celery chopped stalks


1 cup chopped carrots


1-cup peas


1 small onion


2 chopped garlic cloves


6 cups chicken stock


1-cup long grain & wild rice


½ cup half & half


¼ cup flour


1 Tb olive oil


Salt & pepper to taste


 


Directions:


Cook rice according to package directions.  Set aside Sauté, in olive oil, onion, celery, carrots until softened.  Add mushrooms and garlic  & peas.  Add chicken stock bring to a boil.  Reduce heat and stir in half & half, flour salt & pepper.  Cook for a few minutes.  Add chicken & rice.  Cook for 20 minutes, stirring occasionally.  Serve with crusty bread.  Enjoy!
