I have only one thing to say about my Cooks Essentials Pressure Cooker…Where have you been all of my life!!!  I am having a ball trying out some of my favorite foods cooked the pressure cooker way.  Here is my latest dish.


Moist Chicken & Veggies


 


Ingredients:


8 skinless boneless chicken thighs


½ cup chopped onions


½ cup diced red potatoes


½ cup chopped celery


½ cup chopped carrots


1 cup sliced mushrooms


½ cup dry white wine


½ cup chicken stock


½ cup heavy cream


½ Tb spoon dried Rosemary


½ Tb spoon dried Thyme


Salt & pepper


2 cloves garlic


Olive oil


Directions:


Season the chicken with salt & pepper.  Turn pressure cooker to browning mode.  Add olive oil and brown chicken on both sides.  Remove and set aside.  Add onions, garlic, celery, carrots & mushrooms to the pressure cooker sauté for 3-4 minutes.  Add wine, cream & chicken stock, stir for a minute.  Return chicken to the pressure cooker.  Add the potatoes, Rosemary & Thyme.  Put the lid on and lock it in place.  Make sure the pressure valve is set to airtight.  Program the pressure cooker for 30 minutes.


I understand why people have used pressure cookers for decades.  It really helps to infuse the flavor of the seasoning you use into the meat and the meat is moist and tender.  Quick, easy, flavorful, one pot meal that is a breeze to clean up, what more could you ask for.  Enjoy!
