A Fall Favorite -- Pumpkin Soup and Grilled Cheese

I’m not one to rush the changing of the seasons, but now that August is here, it won’t be long until the leaves start to turn, the air starts to chill, and the days grow shorter. I love fall colors -- orange, and yellow and green.



Yellow mums are my favorite, and the autumnal shades found in an assortment of gourds is the perfect decoration in a bowl on my kitchen island. And another of my favorite things in fall is a delicious bowl of pumpkin soup and a grilled cheese sandwich. Ahhhh, here comes Fall!



Here’s a recipe for an easy pumpkin soup. I hope you like it as much as I do!



2  15 oz cans pure pumpkin


2  14 oz cans of chicken broth


1/2 cup heavy cream


1 grated onion


1/2 clove minced garlic


2 teaspoons pumpkin pie spice


2 tablespoons olive oil


dash of salt


pinch of pepper


Heat olive oil in saucepan on medium. Add onion and garlic and heat to soften. Stir in pumpkin, chicken broth, heavy cream, spice, salt and pepper. Cook for 5-8 minutes until soup simmers. Pour into a soup mug or bowl and serve with a grilled cheese sandwich.
