For this Meal Make-over Monday Recipe, I wanted to specifically keep my #21 Day Fix friends in mind. Although our Living for Me challenge has officially ended, I know many of us are still moving forward with healthy lifestyle changes and adjustments. I've heard from several of you out there on the 21 day fix plan who are looking for exciting ways to stay on your plan. Here's a great way to integrate your new eating regime with delicious and pretty food. After all we do eat with our eyes first!
#21DayFix Approved Caprese Salad Meal Makeover
Ingredients:
1 Green, 1/2 Blue, 1/2 Orange.
1 medium tomato (cored)
1/4 cup broccoli sprouts
1/4 cup micro salad greens
Five leaves fresh basil
1/8 cup cubed fresh mozzarella
1 Tablespoon light balsamic vinaigrette.
Directions:
Core the tomato
Measure 1/4 cup of broccoli sprouts and add to a bowl.
Add 1/4 cup microsalad greens to bowl.
Add basil leaves.
Cut mozzarella into chunks and add to bowl. Mix all ingredients and stuffed cored tomato with mixture.
Drizzle with balsamic.
So fresh and light and yummy! Give it a try!
