Beauty from the Inside Out: A Recipe

With the holidays quickly approaching and football season in full swing, it’s easy to fall victim to unhealthy eating habits. The best way to stick to your plan is to bring a healthy dish to share! Here’s a recipe for a dip that you won’t have to feel guilty about eating. Serve it alongside fresh, crisp veggies like broccoli, carrot sticks, and celery.


Puréed Lentils


Ingredients:


2 cups dried lentils


1 Tbsp. olive oil


1/2 red bell pepper, roasted, peeled, and coarsely chopped


Sea salt and freshly ground black pepper


Directions:


Bring a pot of salted water to a boil.


Add lentils. Reduce heat and simmer, covered, until soft (about 20 minutes). Drain them well.


Transfer the lentils to a food processor or blender. Add the olive oil, bell pepper, sea salt, and pepper to taste. Purée.
