Mary Beth's Menu - Banana Bread

When life throws us lemons, we're told to make lemonade. So, when your bananas go "bad", make yummy banana bread! Here's my mom's recipe that I hope you'll love just as much as I do.

 

Mom's Banana Bread



    • 1/2 cup shortening (I generally use Crisco)

 

    • 1 teaspoon vanilla extract

 

    • 1-1/3 cups packed brown sugar

 

    • 2 eggs

 

    • 2 cups flour

 

    • 1 teaspoon baking soda

 

    • 1/4 teaspoon table salt

 

    • 1 cup mashed bananas

 

    • 1/2 cup chopped nuts

 

    • 1/4 cup sour milk (To make sour milk, add 1 Tablespoon vinegar or lemon juice per one cup of milk)



Cream together the shortening, vanilla and sugar. Add eggs and beat completely. Stir in the dry ingredients, then the sour milk and the mashed bananas. Mix until smooth. Stir in nuts.

 

Pour into two greased bread pans and bake at 350 degrees for 50 - 60 minutes.

 

I added one cup of chocolate chip morsels to this batch along with the nuts. Yum!!
