Mary Beth's Menu - Special Scallops

Special Scallops



  • 1 lb bacon

  • 2 lb sea scallops

  • 1/2 cup olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon pepper

  • 1/2 teaspoon onion powder

  • dash oregano


Cut bacon in half. Wrap a half slice of bacon around each scallop. Depending on the size of the scallops and how much bacon you like, you can either leave them like that, or take one more half slice of bacon (like I did) and wrap it around the opposite side of the scallop to create a criss cross. If necessary, secure with wooden toothpicks.


Combine olive oil and spices. Pour over the scallops wrapped with bacon and cover with saran wrap. Marinate in the refrigerator for at least four hours.


Set oven to broil and preheat for approximately ten minutes. Remove scallops from the marinade and place on a broiler pan. Place the broiler pan four inches from heat and broil 7 to 10 minutes until bacon is brown.


Turn over and brown on the other side approximately 5 to 10 minutes. 


Serve with or without the toothpicks and enjoy. They are fabulous plain or with a tangy horseradish sauce.
