My Sister's Peach Pie Recipe

In honor of it being "National Pie Day," it felt appropriate to share one of my favorite pie recipes.  I can't take credit for it though.  It is Karen's recipe, my younger sister.  She is an amazing baker and entertainer!  Can't you tell how much this recipe is loved by the worn recipe cards in the photos?!  Smiley Happy

 

For the Dough:

 

 

Ingredients:
1-1/2 Cups flour
1/2 Cup well chilled butter, cut into pieces
1/4 Cup sugar
1/8 Teaspoon saly
1 Egg
2 Tablespoons water
 
Place blade in bowl, process flour, butter, sugar and salt until mixture is crumbly and butter is in large to medium pieces, about 8 seconds.  Combine egg and water.  With mixer running, add egg mixture through feed tube.  Process until dough forms a ball, about 20 to 30 seconds.  Refrigerate dough for easier handling.  Roll out dough to fit pie pan.  ****** bottom of crust.  Chill at least 30 minutes.  Bake in preheated oven 450 degrees 15 to 20 minutes or until lightly browned.  
 

 

For the Filling:

 

 

Ingredients:
3/4 Cup Sugar
3 Tablespoons flour
1/4 Teaspoon nutmeg or cinnamon
Dash of Ginger
1/8 Teaspoon Salt
5 Cups Fresh Peaches
2 Tablespoons Butter or Margarine
 
 
Preheat oven to 400 degrees.  Line a 9" pie plate with pastry.  Combine sugar, flour, spice and salt.  Add to peaches; mix lightly.  Fill shell.  Dot with butter.  Adjust lattice crust; crimp edges.  Bake at 400 degrees for 40 to 50 minutes.  Serve warm with cream or ice cream.
