Easy New Year's Recipe: Southwestern Rice Bake

Hola, everyone!


I’m spending a few days in Puerto Rico with my family…the hustle and bustle is over and we’re getting some much-needed down time. If you’re on Facebook, you might have seen a few pictures I posted, but if not, allow me to send a little sunshine your way!

On Sunday, we hiked through the El Yunque rainforest and cooled off with some fresh coconut water...it really hit the spot!

Yesterday, we spent some time at the beach. How do you all feel about a QVC studio in Puerto Rico???


More photos to come…in the meantime, I have to share a recipe with you. We went to dinner last night and I had a dish that reminded me very much of my Southwestern Taco Bake, which would be great for your New Year's party! You can make this a dip, entrée, casserole…you decide. I’ve served it hot with chips, made it the "meat" for tacos, and often use it to fill my stuffed peppers.

Southwestern Rice Bake


Ingredients:



  • 1 small onion, diced

  • 1 tsp mined garlic

  • 1 lb ground turkey

  • 1 package taco seasoning + water

  • 2 cups brown rice

  • 1 can diced tomatoes and green chilies, undrained (I use ROTEL)

  • 1 can corn, drained

  • 1 can black beans, drained and rinsed

  • 1 (8-oz) container sour cream or plain Greek yogurt

  • 1-1/2 cups crushed tortilla chips

  • 2 cups shredded Mexican blend cheese


Preparation:



  1. Preheat the oven to 350°F.

  2. Add the onion, garlic, and ground turkey to a large skillet and cook over medium heat until the turkey is cooked through. Drain the grease, add the taco seasoning and water according to the taco seasoning directions. Set aside.

  3. Cook the rice according to the package directions, but use the juice from the tomatoes and chilies as part of the required liquid. Once the rice is finished, set it aside.

  4. Mix the turkey, rice, corn, beans, and sour cream in a large bowl. Spread the mixture into a 13" x 9" pan. Top the mixture with crushed chips and then the cheese. Bake until the cheese is melted and bubbling on top. Don't let it get too brown.
