Mini Frittatas - Happy National Egg Day

Today is National Egg Day, so I'm sharing one of my egg-dish recipes in celebration.


My family has a tradition of “pitch-in” brunch whenever we’re all gathered together. It’s a casual way to feed everyone, and everybody is responsible for a dish.


I like to make mini frittatas and serve them with fresh berries. 


This easy recipe starts with a base of 8 eggs, 1/3 cup of milk, and 1 cup of cheese. You can change up the ingredients to whatever you like or happen to have on hand.


 Ingredients:



  • 8 eggs

  • 1/3 cup milk

  • 1 cup swiss cheese

  • 1 package turkey bacon cooked and chopped

  • 1 cup chopped mushrooms

  • 1 cup chopped asparagus

  • 1 medium onion chopped

  • 1 tablespoon olive oil

  • salt and pepper


Preheat oven to 350 degrees. Spray 12-cup muffin pan with non-stick spray.


Sauté mushrooms, asparagus and onions in olive oil until soft (about 5 minutes) and remove from heat. Whisk eggs and milk together in a bowl. Add sautéed vegetables, bacon and cheese; salt and pepper to taste. Stir until completely mixed.


Pour into 12-cup muffin tins.


Bake for 20-25 minutes. Place mini frittatas on a platter and serve!
