Baked Gnocchi & Meat Lovers' Pizza Mac & Cheese--It's Comfort Food Season!

Hello, foodies…


How was your weekend? Lots of my friends and neighbors spent the weekend decorating for fall and my street looks so festive! I plan to do a little decorating of my own soon and I promise I’ll post pictures. In the meantime, here’s what I did do this weekend…used my FoodSaver!

Pork chops were on sale at the food market so I bought lots, came home, FoodSaved them, and got them in the freezer. Now, when I don’t have time to go to the market mid-week, I don’t have to worry about it…my freezer is stocked!


Foodies, I'm lucky enough to try out lots of the kitchen tools and appliances that air on In the Kitchen with David in my own home. There are some things that I truly love and keep and the FoodSaver is one. When I was growing up, we didn’t have a lot of money…my mother always bought the family-size packages of chicken, beef, pork, and fish. We didn’t have a FoodSaver then and it was inevitable: sometimes food got freezer burn. My mother was devastated. We didn’t have extra money lying around and she literally had to put that food in the trash. Today, out of habit, I still buy the family-size packages of meat (because yes, they really are cheaper) and use the FoodSaver to preserve the rest. Foods that lasted months now last years. And refrigerated foods last months, not weeks or days. It’s incredible how this machine works and I encourage you all to consider a FoodSaver—especially now that this model is on Easy Pay and available at a special price. You won’t regret it.


I also know you won’t regret trying Wednesday’s one-pot recipe: Baked Gnocchi. I made this for friends last weekend and it knocked their socks off!



Baked Gnocchi
Serves 4-6


Ingredients:



  • 2 (10-oz) bags frozen gnocchi

  • 1/2 lb bacon, diced

  • 1 cup medium diced onion

  • 1 (16-oz) jar Alfredo sauce

  • 1 cup frozen peas

  • 1 (9-oz) package precooked chicken breast, medium diced

  • 1/2 lb Fontina cheese, shredded and divided

  • 1/4 cup grated Parmesan cheese

  • 1 tsp black pepper

  • 1/2 cup Mozzarella


Preparation:



  1. Preheat the oven to 375°F.

  2. Bring 2 quarts of salted water to a boil in a large, oven-safe skillet. Add the gnocchi and stir. Return to a boil and cook until all the gnocchi has risen to the surface, about 3–5 minutes. Drain the gnocchi in a colander and rinse with cold water. Rinse the skillet with water and wipe dry.

  3. Heat the skillet over medium heat. Add the bacon and sauté until browned. Remove about half of the bacon fat with a spoon. Add the onion to the skillet and sauté until translucent. Stir in the Alfredo sauce, peas, chicken, half the Fontina, Parmesan, black pepper, and gnocchi. Top with the rest of the Fontina and Mozzarella. Bake for 45 minutes, or until bubbly and brown.
