Jennifer's Gumbo

During the holidays it's tradition in my New Orleans-based family to take all the leftover turkey and turn it into a gumbo! Here's the recipe...hope you like life spicy!


Ingredients:


2 lbs cooked turkey off the bone


8 cups stock (chicken is fine, but bonus if you used the turkey bones to make the stock!)


1 lb. fresh or frozen okra, sliced into small rounds


1/2 cup cooking oil


1/2 cup flour


2 cups chopped onions


1 cup chopped green bell pepper


1/2 cup chopped celery


1 can chopped tomatoes


3/4 pound andouille sausage, sliced into small rounds


1 tsp. thyme


1 tsp. basil


1/2 tsp. sage


1/2 tsp. black pepper


1/4 tsp. cayenne (more if you're adventurous!) salt to taste steamed rice 


Directions:


Saute the okra for 15 minutes in a drizzle of oil until the "stickiness" is gone and set aside. Heat the remaining oil in a large stockpot and add the flour, stirring constantly until the mixture turns a caramel color (this is called a "roux"). Add the onions, bell pepper and celery and cook until tender. Add tomatoes, sausage and okra. Cook 15 minutes more then add all the spices and the stock. Simmer for an hour, add the turkey and simmer another 15 minutes.



Serve in soup bowls with a scoop or steamed rice. Even better then next day!!
