Spring Veggies: What’s in Season Now

by on ‎04-10-2014 12:43 PM

I’m so glad spring has finally sprung (at least in most of the country). I just love the sense of renewal and rebirth that comes with springtime. It really is life-affirming.

One thing I do every spring is take a little trip to my local farmers' market to check out the fresh spring produce. I’m always amazed at the bright colors, flavors, and value of fresh in-season fruits and veggies. There’s nothing better!

Here’s my top 10 fruits & veggies list:

Asparagus. Depending on where you live, most asparagus is harvested in the spring before June. I like thin spears best, but thicker spears can be just as tender after you cook them. Try steaming with a little squeeze of lemon and a dab of butter.

Artichokes. Look for tight, compact leaves and stems that have been freshly cut when shopping for artichokes this spring.

Peas. When I think of spring, I think of crisp, bright green peas and pea pods. Yum!

Radishes. These little red spicy/sweet beauties are at their best every spring. I toss them in salads and munch on them all by themselves.

Carrots. Usually available all year, but I love the carrots farmers pull in spring and early summer. They just seem sweeter to me.

Cherries. Juicy Bing and Rainier cherries are a delicious way to welcome spring and early summer.

Strawberries. The strawberries seem especially sweet this year. And did you know they’re full of vitamin C?

Mangoes. Mangoes are a favorite fruit for billions of people all around the world. Trees near my home will be drooping with fruit by late May and June. Can you say mango salsa?

Apricots. Ripe and fresh spring apricots are delicious on their own or sliced on top of cereal, ice cream, or baked into pies or tarts.

Herbs. Spring herbs are also abundant in this time of year—especially mint and parsley. I love snipping a little bit of parsley from the bunch and adding it to all my dishes. And fresh mint is incredible in hot tea or cool drinks.

Some more tips: Always check the color of fruits and vegetables before you buy. They should be brightly colored for the best value. To be sure you’re getting ripe, juicy, delicious fruit, always pick it up and see how it feels. It should feel heavy in your hands for its size. You should also do a sniff test. The fruit should smell like you want it to taste.
