We have a really nice restaurant in our neighborhood that is only open for breakfast and lunch. My family loves going there for breakfast but our favorite dish is their chicken salad. I don't know what it is that makes it soooo good but we just can't get enough of it! I think part of their secret is to keep it simple. Chelsea and I were trying to think of something for dinner last night and decided we wanted Meghan's chicken salad. Of course they close at 2:00pm so that was not gonna happen. We decided to make it ourselves. We were pleasantly surprise at how our chicken salad turned out. This is a no frills recipe. No grapes, nuts, onions etc. (although my friend Holly make one with all the for mentioned extras that I love) we were going for quick and easy, Meghan's style chicken salad. Try it and let me know what you think. Enjoy!

Here is my latest creation:
No Frills Chicken Salad
What you'll need:
4 boneless chicken breasts
1 cup chopped celery
Salt & pepper
3 tbsp. Helmans mayonnaise
1/2 tsp. Lawry's Seasoned salt
1/2 tsp. celery seed
Directions:
Season chicken breasts with salt & pepper bake uncovered 375 degrees until cooked throughout. Let cool.
Cut chicken to bite sized pieces. Mix in remaining ingredients.
You can add more mayo if you like a creamier consistency.
I served it on fresh spring mix greens and topped with fresh chopped tomatoes and cilantro.
