Easy Breakfast Cobbler

I’m desperate for some Spring. We need some warmth. We need some sunshine. We need some GREEN! I know it’s coming, but I’m getting a little antsy. No more salt on our cars, please!

In order to stave off some of the housebound stir-crazy, I added a new “side” to our brunch this past Saturday morning and it was AWESOME. 4 ingredients, bright, sweet, and just a little bit crunchy. It’s very easy, but wanted to share it with you anyway!

Here’s all you need:

1 CUP Raspberries

1 CUP Blueberries

2 tablespoons honey

3 tablespoons crushed gluten free graham crackers

Things to note: It’s best if the berries are fresh. Also, please feel free to use less honey if you like (I love sweet, so I get it where I can.) On that note, if you want to alter any of the ratios: please feel free to do so! Want more crunch? Smash up some extra graham crackers. I put 3 of them in a bag, used a mallet, and broke them into small pieces. I love the Kinnikinnick graham crackers, but any kind will do. Here’s a photo of what the box looks like:

Now mix it all into a bowl, serve cold, and ENJOY! It’s so easy and we like to think of it as “Breakfast Cobbler” at our house. Also, we can just FEEL Spring around the corner when we eat it! I promise, it’s coming…
