Mary Beth's Menu - Mom's Cheese Soup

My mom used to make this soup often when my siblings and I were growing up. It always tasted so good, especially since it was so cold in Minnesota. Perhaps it has a more formal name, but we always called it, "Mom's Cheese Soup!" and that's just fine with me! Smiley Happy 

 

January is 'National Soup Month' and the16th of this month is 'National Soup Swap Day'. It's similar to a Cookie Exchange, but instead of exchanging cookies, everyone exchanges soup. What a fabulous idea during the colder months. The article I read about a soup swap suggested 6 to 8 participants, exchanging 1 quart each of soup. You could make a night of it bringing an extra quart to share together during a girl's night (or a couple's night) dinner. Sounds fun to me!!!

 

However you decide to make and share my "Mom's Cheese Soup", I hope you will love it as much as we all do. Let me know what you think if you do try it.

 

 

 

Mom's Cheese Soup

    • 1 small onion, chopped
    • 1/4 cup butter
    • 1/2 cup flour
    • 2 tsp. salt
    • 1 tsp. pepper
    • 2 cups milk
    • 1 tsp. yellow mustard
    • 1 can chicken broth
    • 1 lb. Velveeta cheese
    • About 4 cups of pre-cooked vegetables of your choice (more or less depending on how chunky you like your soup). I generally use broccoli, cauliflower, sliced carrots, baby peas and mushrooms.

 

In a large pot, melt the butter, then add the onions, possibly mushrooms, and sauté them in the butter until cooked.

 

Then add the salt and pepper and then the flour and mix together. Let the flour coat the onions and mushrooms.

 

Then begin to add the milk, slowly and in small amounts to create a smooth rue used as a thickener. Then bring the milk mixture to a low boil for one minute, stirring the entire time. Then add the chicken broth and stir it in.

 

Then cut the Velveeta into chunks and put into the hot milk mixture which then begins to melt. Stir often. Also add the mustard at this time. When it has a good smooth texture, add all your cooked vegetables. If it's too thick to your liking, then add a bit of water (or milk) to get it to the consistency you prefer. Let it all simmer on the stove top for 10-15 minutes, and then serve and enjoy!
