Peppermint Popcorn Balls - The Perfect Holiday Munchie

Hi, everyone!


I love popcorn. And I love how you can literally add any flavor—cheddar, spicy pepper, or caramel and make a totally new treat. A gourmet popcorn shop near my home has bins filled with chocolate-covered popcorn and it got me thinking…what if you put white chocolate—and peppermint—on top of your popcorn? It seemed perfect. Well, I tried it. And it turned out even better than I could have imagined. Here’s my holiday recipe for Peppermint Popcorn Balls!

Peppermint Popcorn Balls


Ingredients:



  • 1 bag microwave popcorn, popped

  • 8 oz white chocolate chips

  • 1 cup vanilla frosting

  • 2–3 drops red food coloring gel

  • 15 starlight mints

  • Red sugar sprinkles or jimmies (optional)


Preparation:



  1. Spread the popcorn on a wax paper-lined cookie sheet.

  2. Crush the starlight mints in a food processor.

  3. Melt the white chocolate chips in a glass bowl for 30 seconds, stirring until melted.

  4. Stir the vanilla frosting into the melted white chocolate and microwave for an additional 10 seconds. Stir the drops of red food coloring into the frosting mixture until you get the desired color. While still warm, drizzle the frosting mixture over the popcorn.

  5. Sprinkle with the crushed starlight mints and sprinkles or jimmies, if using.

  6. Scoop into balls using a small ice cream scoop.


This recipe is prepared with the Temp-tations® Old World 10-Piece Gadget Essentials Roll-Up Kit (K41207 & K41213).


When I first made this recipe, I just drizzled the flavor on top. But, as I ate it, realized I was unconsciously rolling the popcorn into balls. The sticky mixture turned out to be the perfect binder and my kids loved the shape.


When I make these again next month, the kids asked to help. So we're having a popcorn party.
