Balsamic Cranberry Chicken

I ordered the Cooks Essentials pressure cooker when it was a TSV.  I went on Pinterest to get some recipe ideas and came across a recipe that looked easy and I tweaked it a bit.  It was so easy and so fast and the chicken was moist and flavorful.  Who knew that fast food could be so good. LOL!


       


Balsamic Chicken Thighs with Cranberries  


Ingredients:


      2 lbs. chicken thighs
      1 ham hock
      2 cups chopped carrots (fresh or frozen)
      2 cups of onions (fresh or frozen)
      1 Cup dried cranberries
      2 bay leaves
      4 cloves of garlic
      1/4 Cup Balsamic vinegar
      1/4 Cup red wine vinegar
      1/2 Cup Chicken Broth


Directions:


Put the chicken and ham hock in the pressure cooker first then add all the other ingredients.  Set the presser cooker for 20 minutes.  Let the pressure come down naturally.  The chicken is fall off the bone tender.  I served it with a loaded baked potato and broccoli.  Yuuummmy!!!
