Ice Cream Bombe

  • 1/2 gallon vanilla ice cream

  • 1/2 gallon chocolate ice cream

  • 2 cups heavy cream

  • 1/4 cup sugar

  • 2 teaspoon vanilla extract

  • dozen peppermint patties

  • 1/2 cup chopped walnuts

Allow ice cream to sit on countertop to soften. Spread vanilla ice cream in a large flat pan, like a broiler pan. Top with chocolate ice cream (you can either cut the ice cream in slices or spread with a heavy spoon). Place in freezer.

Chop the peppermint patties in small pieces. Place heavy cream, sugar and vanilla in a stand mixer and whip until thick. Fold in walnuts and candy.

Remove ice cream from freezer and spread whipped cream mixture evenly on top. Place back in freezer and serve when top is hard.

Scoop into bowls and enjoy or cut into squares and wrap in aluminum foil for a Klondike-type frozen treat.

You can use any flavor of ice cream or candy you wish. Customize it to what you love best.

Counting our blessings,

Mary Beth Roe
