Rangemate Cooking Day 5 -- Black Bean Quesadilla

The only time I put tortillas in the microwave is to warm them, and even then, they have to be wrapped in a damp paper towel and watched very carefully because they can easily become leathery and tough. So I was pleasantly surprised when I made this quesadilla in the Rangemate and the tortillas were perfect. Prep time about 5 minutes -- time in the microwave 3 minutes. Lunch ready in under 10!


 


Black Bean Quesadilla


 


Ingredients -- (makes 2 quesadillas)


1/2 can of black beans, drained


1/2 cup shredded pepper jack cheese


1 tbsp chopped cilantro


4  6” tortillas


1/2 avocado, cubed


1 tsp fresh lime juice


pinch of salt


Mash half the beans with a fork until smooth, and mix with remaining whole beans. Spread beans on tortilla, top with cheese and cilantro. Cover with second tortilla. Spray Rangemate pan with non-stick spray and place quesadilla in pan. Cover with lid and microwave for 2 minutes. Flip quesadilla and microwave for 1 minute more. Remove quesadilla from pan and cut into 4 slices. Toss cubed avocado with lime juice and salt and serve over quesadillas.
