Rangemate Cooking - Day 1 - Fritatas!

I have a frittata recipe that typically takes 35 minutes in the oven. I used the same ingredients and made Mini Frittatas in the Rangemate. They came out perfectly and only took 12 minutes. Plus, I can freeze the the little individual frittatas and they’re perfect to pull out for breakfast in a hurry!


Once my mini frittatas were done, I put chicken sausage links in the Rangemate and they were done in 4 minutes -- complete with grill marks. I added fresh berries and clementines and breakfast was done. Delicious and soooo easy


Day 1 and I’m loving this pan already!


 


Mini Frittatas in the Rangemate


Ingredients


4 eggs


1/3 cup milk


2/3 cups shredded cheddar cheese


1/2 cup diced zucchini


1/4 cup diced red bell pepper


2 tbsp diced yellow onion


salt


pepper


olive oil


non-stick cooking spray


Beat eggs and milk in a bowl. Stir in vegetables and cheese, and season with salt and pepper. Spray Rangemate silicone muffin cups with non-stick spray and pour egg mixture into each cup. Fill the bottom of the Rangemate pan with 1 cup of water and place the muffin insert into the pan. Cover with lid and microwave until the egg mixture sets to your desired solid texture. (It took 12 minutes in my 1000 watt microwave)


 *Optional -- In a small bowl combine the zucchini, red pepper and onion; add a dash of salt and drizzle with a little olive oil. Cover the bowl and cook in microwave for 1 minute. This softens the vegetables and enhances the flavor before they’re added to the egg mixture.


You can double or triple the recipe for multiple batches since the mini frittatas will freeze well. You can also change and add any ingredients that you like. I think I’ll try spinach, mushrooms and swiss cheese next time. :-)
