Stuffed Peppers
Recipe:
What you'll need:
4 bell peppers cut in half and cleaned
Chicken broth
1-1.5lb ground beef (or turkey)
1 can black beans (drained/rinsed)
1 can of diced tomatoes (drained/rinsed)
About 1 cup frozen corn
2 jalapeño peppers (diced)
About 1/2 an onion
1tsp Garlic
Chili powder
Cumin
Cilantro
Shredded cheese (I used a Mexican four cheese blend)
Instructions:
-Preheat oven to 350 degrees
-Cook ground meat in a large skillet
-Once the meat is cooked add in beans, tomatoes, corn, jalapenos, onion, and garlic; stir
-Then add spices and cilantro to taste
-Stuff peppers with the filling
-Pour about 1/2 cup of chicken broth into an oven safe dish (I used a glass Pyrex dish)
-Place the peppers into the Pyrex and cover with aluminum foil
-Bake for 40-50 minutes (I baked mine for 40 minutes so that the peppers still had a little crunch, cook longer for softer peppers)
-Sprinkle with cheese and enjoy!!
*you could use a packet of taco seasoning instead of the spices that I used*
