We were inspired by your recipe swaps in the forums, and we wanted to get involved in the fun!

With springtime right around the corner, what better way to celebrate spring than to spend some time in the kitchen using all the available fruits, vegetables and other ingredients that are fresh and blooming! Let’s swap our favorite spring time recipes and share what we will be cooking up in our kitchens this season. Feel free to comment below with your favorite recipe and picture to share with the Q community!

Here is a great recipe from our very own Q host, David Venable.

Tomatillo Guacamole

Ingredients:

4 large tomatillos, peeled and halved
3 ripe avocados, peeled, pitted, and quartered
1-1/3 cup loosely packed fresh cilantro, stems removed
4 jalapeños, seeded and halved
2 garlic cloves, peeled
1-1/4 tsp salt
1/2 tsp ground black pepper
3 Tbsp fresh lime juice

Directions:

Peel the tomatillos, then rinse and remove sticky residue. Notice how shiny the tomatillos are?

There are seeds on the inside of a tomatillo. As is the case with tomatoes, the seeds are edible. Just halve these little guys and you’re done.

Now for a quick avocado tip. To remove the pit, pretend you’re chopping the pit and lodge the knife blade in the top. Then, twist with your wrist and the pit will come out.

Once the prep is done, place the tomatillos, avocados, cilantro, jalapeños, garlic, salt, pepper, and lime juice into the bowl of a food processor, in the order listed. Pulse five times, and then process until all ingredients are fully combined and the mixture is smooth and creamy.

Give it a taste. Then, refrigerate until ready to serve.
