Mary Beth's Menu - Do You Like Your Swedish Meatballs Over Rice, Potatoes Or Pasta?

My mom and dad are both 50% Swedish and 50% Norwegian, so we grew up eating some Swedish foods and some Norwegian foods. Swedish: Swedish meatballs, Swedish Egg Coffee, pastries Krumkaka, Petit Fours, and Swedish Ring pastry, Swedish Rice Pudding (I loved all of the Swedish foods).  Norwegian: Lefsa (a thin dough with butter and cinnamon sugar), Lutefisk ( I never liked this fish), Fruit Soup ( I didn't like it as a kid, but I do now). Those are the main things I remember.  


Every family has foods from their ethnic background and it's important to keep those traditions passed down to the future generations. This week I went with the Swedish side; I hope you enjoy it!


Swedish Meatballs



  • One pound ground beef

  • 1 Egg

  • 1/2 Cup dry breadcrumbs

  • 1 Can cream of mushroom soup

  • 1 Can cream of chicken soup

  • 1/2 Cup chopped onion

  • 1 Cup sour cream

  • 2 Tablespoons butter

  • Salt and pepper


In a large mixing bowl, combine ground beef, egg, breadcrumbs and salt and pepper.



Form into balls and cook on low to medium heat until no longer pink.



Drain well. Add butter and onions and cook an additional 3 minutes.



Combine soups and sour cream in a separate bowl.



Turn heat down on the meatballs and add the soup mixture to the pan.



Let simmer on low for 20 minutes and serve over noodles, rice or potatoes. I used egg noodles this time.
