The Boy's Back-to-School Butterscotch/Chocolate Chip Cookies


Ingredients:



  • 8 ounces room temperature butter, unsalted

  • 1 cup sugar

  • 1 cup light brown sugar

  • 2 teaspoons vanilla

  • 2 large eggs

  • 3 cups all-purpose unbleached flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 8 ounces semi-sweet chocolate chips

  • 8 ounces butterscotch chips


Directions:



  • Preheat oven to 350 degrees

  • Cream butter and sugar together in a mixer                                      (We are a KitchenAid mixer family)

  • Add eggs and vanilla and mix for 3 minutes

  • In a separate bowl, combine flour, salt and baking soda

  • Gradually mix in flour combination, but only mix until just combined (don't over mix!)

  • Fold in both kinds of chips

  • Roll into balls, about tablespoon-ish size and bake 10-12 minutes on a cookie sheet. They should be light in color with just a touch of brown starting on the edges, this way they will be nice and soft

  • Transfer to a wire rack to cool
