Ready, Set, Glow!

Recently we hosted acclaimed author Jolene Hart of Eat Pretty: Nutrition For Beauty Inside and Out who came to speak at The Barn...and what eye-opening messages she shared with us! Jolene is a beauty editor turned health coach who believes we all can “look and feel our best from inside out.”




Jolene reminded us that each season offers fresh fruit, vegetables, and herbs that boost our metabolisms and make our skin glow. Her book is a must for anyone who wants to take advantage of the great things fruits, vegetables, and herbs give us. There is so much helpful and applicable information – I keep referring to the key Eat Pretty concepts: wholeness, color, variety, anti-inflammation and individuality. And as spring is the season of cleansing – Jolene buoyed all of us – especially me - to get our “pretty” out.


My Café Director here at The Barn and Valley Forge Flowers, Tracy Rogusky planned the day for us and 50 guests. She prepared a delicious lunch based on Eat Pretty that included these 2 wonderful salads that Tracy created.




Power Green Salad



  • Baby kale, arugula, spinach and any of your favorite mixed spring greens (eyes, skin, liver and bone health).

  • Sliced radishes (healthy skin and nails)

  • Jarred artichokes (slimming)

  • Sliced pecans (minerals and vitamins)

  • Cucumbers (moisturized skin and calming agents)

  • Shaved cheese (optional, but Tracy knows I do love cheese, God bless her) – such as a nutty Gouda


Dress with small amount of lemon (immune booster) olive oil or your favorite vinaigrette (Tracy used Alpine Avocado Vinaigrette that we carry at The Barn)



3 Berry Salad



  • Washed and sliced strawberries(metabolism and antioxidant), blueberries (anti-aging) and raspberries (skin, hair and ant-aging)

  • Lightly drizzle of good Balsamic vinegar.  Tracy used a white balsamic with citrus.  (Use just a small amount of the balsamic – it goes a long way.  And this is encouraging too when you go to buy a good, costly vinegar.  You will surely taste the difference)
