How-to Make Popcorn Balls -- The Perfect Summer Sleepover Snack!

So are your kids and grand-kids out of school yet? We’re mostly finished here in the Philadelphia area…some schools are out today, others wrap up the end of next week. I can’t remember a time when the kids were in school as long as they were this year. What a winter! Anyway, summer is my kids’ favorite time of year, as well as my own. I love being able to spend more time with them and do things like go to the beach, go to local amusement parks, and have summer sleepovers!


Did you ever see that popular coffee commercial on TV? The father and son are camping—they’ve got their tent set up, a campfire going, marshmallows over the fire, and they catch some lightning bugs in mason jars...hopefully they already had breathing holes punched in the top! Anyway, at the end of the commercial, it starts raining and they run inside the house....which is right there! They were in the backyard the whole time. I LOVE that. And I wholeheartedly agree with the concept…you needn’t go to a fancy park or campground to have a summer sleepover unless you’re lucky enough to have one nearby. You don’t even have to go outside, for that matter. You can have summer sleepovers virtually anywhere…as long as you and the kids aren’t in their normal beds, it’ll feel special.


The secret is to make it an “event.” Give the kids a backpack and help them fill it with camping supplies like flashlights, sleeping bags, books, and SNACKS. In the our last YHJ episode, I showed you how to make Popcorn Balls and I can’t think of a better time to have snacks at-the-ready, or make with the kids before your trip.



 


Popcorn Balls


Ingredients:



  • 1/2 stick butter

  • 40 mini marshmallows

  • 1 tsp vanilla

  • 12 cups popped popcorn (and/or cereal)

  • 1 cup of your favorite nuts (optional)

  • 1 Tbsp cayenne pepper (optional)

Preparation:



  1. Melt the butter in a large saucepan over low heat. Stir in the marshmallows and vanilla and continue to stir until melted.

  2. In a large bowl place popcorn, cereal, or a combination of both. Add the marshmallow mixture, nuts, and spice, if using. Mix to coat.

  3. Spray a large ice cream scoop with cooking spray. Then, put on disposable gloves and spray the palm of each hand with cooking spray. Scoop balls of coated popcorn, shape into balls with your hands, and place them on waxed paper to stand until firm.
