For a while, I had concluded that if you were flying out of Philadelphia and it was raining… go ahead and count on your flight being delayed by at least 2 hours. However, IF it’s snowing… count your flight leaving 15 minutes early. For more than a year, this assumption had worked for me UNTIL October 29th. As you know, we had a huge storm up here that involved snow, hail, rain, and a bunch of dark clouds. My 1:00 PM flight left at 10:30PM causing me to miss my Aunt Sissy’s SURPRISE 70th birthday party. All was not lost though; I did manage to skype myself into the party and see all of my family for about an hour. So, I ended up stuck in Philadelphia for Halloween… and what else could I do but dress up? Is it just me or are the costumes at Halloween stores getting more and more scandalous every year? My boyfriend went as a guy riding an Ostrich and I had to settle on all that was left at the Halloween store, which was a pink wig, a tutu, and some arm bracelets. I still don’t know what I was, but it was pseudo 80’s rock star :-)
I’ve been cooking up a storm recently and I’ve decided to branch out with some cuisine I wouldn’t normally eat. Chicken and Chinese being one of them. For about a period of 4-5 years I didn’t eat chicken. When I was in college at Ole Miss, Chicken was EVERYWHERE. Every meal in my sorority house involved chicken, heck, they even served Chicken on a stick at Football games. I just couldn’t take chicken anymore so I just stopped eating it. Eventually I sort of- kind of, missed it and recently started incorporating it back into my diet. Anyhow, I found a recipe on Sweet and Sour chicken - changed a few things up and it was delish! Here’s the recipe:
Mix soy sauce, honey, ginger, and garlic in a bowl and marinate chicken for 1 hour. Add Chicken and marinade to skillet and cook for 6 minutes on medium-high heat. Add in peppers, onions, mushrooms, and pineapple, and cook for 4 minutes on medium heat. I made this with fried brown rice with 3 eggs and ½ a cup of ponzu sauce. Finish it with as much fresh chopped cilantro as you would like.
I’m FIVE Christmas presents into the Holiday Season! This is major for me because usually I don’t start shopping until the 1st of December and it’s always a panic. The cool thing so far is, I am over the moon with two Christmas presents for two different people. I almost want to give them their presents early so they can enjoy them. Does that ever happen to you? Has it happened this season yet? If so, let me know what kind of goodies you got ;-)

Is it just me, or have you seen the fair isle print everywhere this season? I wanted to jump on board this trend because basically, I feel like I should be at ski resort in Aspen, sipping on a latte…. Not that I ski or anything…. I digress!
