Skinny Minny Soup
1 small head cabbage, chopped
1 cup chopped onion
1 cup chopped bell pepper

For Meal Make-over Monday this week, I was inspired by the snack bar at all of the Little's games lately. Whether it was basketball, lacrosse, field hockey, or soccer – every single snack bar seem to serve something called "walking tacos." I have no idea why they are so fascinated with walking around with their food?!?!
If you are not familiar with these, walking tacos consist of opening a snack size bag of chips, ladling in a scoop of chili, and topping it with shredded cheese. Perfectly portable and not very good for you at all ....hence my Meal Make-Over!

Black-Eyed Pea Garlic Hummus with Olive Oil
I absolutely love hummus – a great savory yet health conscious dish. I used black-eyed peas for good luck in the new year – a southern tradition in my house. Love that the Vitamix replaces 13 appliances on my counter-tops!
2 cans (15 oz ea) black eyed peas, rinsed and drained
6 tsp. garlic puree or minced garlic
6 T fresh-squeezed lemon juice
1 tsp. salt
2 T olive oil
1/2 tsp. ground cumin
6 T tahini to taste
3T water to thin hummus as needed
2-3 T olive oil, for drizzling on hummus

I couldn't wait to be tagged in our #QCookieExchange. The recipe I am sharing came from the Loring Air Force Base Officer's Wives Club Cookbook (1975.) For as long as I can remember, these have been a part of our Holiday baking tradition. No matter where we moved – and we moved a lot – we always kept these cookies as part of our tradition. I was in New York City recently and I had an amazing opportunity to visit George Simonton's studio. Boy....was I in for a treat! I mean, this is the designer's Designer!!!!
For starters, I had to be buzzed up to one of the most coveted 7th avenue locals.... right smack in the middle of Fashion Avenue and the garment district. Once there, I couldn't believe the view!!! His wall of windows overlooked the exact route for the Macy's Thanksgiving day parade. The view was electric with energy!

Last week, I held a little Birthday gathering for Lisa Robertson. Most of these folks had never been to my house; so of course I cleaned as if Scarlett was coming for inspection. Next up was transforming my circus of a home into a place for an adult birthday party. My hope was that I would be able to create a place that everyone would mingle and visit. I have no idea why my children won’t eat potatoes; but I can get them to eat Acorn Squash?!?! The mysteries never cease. Oh well…. I also use this mixture for stuffed Bell Peppers. By the way, the Olive Oil in this recipe is extra special as it is made in Portugal by the family of our own Electronics guest, Oscar Dovale!!!
